
Introducing: Thai Specialty Coffee – Law Wu Washed Anaerobic
As part of our Roaster's Choice subscription this month, we're excited to unveil a new release from one of our most cherished growing partners: the Law Wu Washed Anaerobic. This microlot comes from the same high-altitude village in northern Thailand as our popular Natural Anaerobic release, but offers a whole new expression of the terroir, thanks to its anaerobic washed process.
A Familiar Origin, A Fresh Expression
Law Wu is a remote village tucked into the cool mountains of Chiang Mai. Home to just 30 families, it’s a place where coffee cultivation is as much about community as it is about quality. The Lahu farmers who grow this coffee bring an extraordinary level of care and attention to every harvest. Working at 1,700 meters above sea level, they take advantage of the region’s consistent shade, cool temperatures, and slow cherry maturation to produce coffees that are layered, sweet, and vibrant.
Our relationship with Law Wu began in 2017, and each year we continue to be impressed by the dedication of its farmers. This latest release showcases both their innovation and their growing mastery of processing techniques.
Washed Meets Anaerobic
This coffee stands out thanks to its unique anaerobic washed fermentation process:
- Step 1 – Fermentation: Ripe cherries are hand-selected and fermented for 72 hours in sealed, oxygen-free barrels. This slow fermentation deepens complexity and clarity.
- Step 2 – Washing & Drying: After fermentation, the fruit layer is removed through a washed process before the beans are carefully dried. This method emphasizes acidity and structure.
